Sam and Lolly at the Beach

I have lived in Santa Barbara for about 15 years now and for as long as I can remember the weather in January has always been really nice. This is the 2nd day in row that we have spent the day at the beach in the 70+ degree weather. Samantha and Lollipop ran laps around each other, jumped in puddles and chased the seagulls. Samantha drew happy faces in the sand, searched for sea shells and loved discovering all the sea creatures in the tide pools. It is hard to keep up with both of them when you are expecting a baby in about 7 more weeks!

Tuesdays with Grandma and Papa

Samantha has really been enjoying her Tuesday visits with Dancing Grandma and Papa Ward (and so have I). They go to the library, the park, feed the ducks, grocery shopping, walk around the mall, visit friends and so much more. Sometimes they do all of this in one day!

I love when Samantha walks in the door on Tuesday evenings because she starts to tell me all the things she did (or what she thought she did) and it goes something like this, "I feed the ducks. I ate ham. The man fixed the pool. I cook with Grandma. I go swimming. I go up and down stairs. I get treats. I read with Papa. I played with the puppy. I had oatmeal."

Asking a 2 year old to rehash their day is pretty funny.

Lombo di Maiale Coi Porri (Pan-Roasted Pork Loin with Leeks)

I made this pork tenderloin recipe as a special New Year's lunch for my family. This recipe is very easy to make, you just need to make sure you allow enough time for the pork tenderloin to simmer. There is nothing worse than getting half way through a recipe and then realizing the cook time is 2 + hours, or worse, the meat requires overnight marinating . I have made this mistake several times and now I make sure I read cooking times thoroughly BEFORE starting the recipe.

Yield: 6 servings (serving size: about 3 ounces pork and about 2 1/2 tablespoons leek mixture)

Ingredients
4 large leeks (about 2 1/4 pounds)
1/2 cup water
1 tablespoon butter, divided
1/2 teaspoon salt, divided
1/2 teaspoon black pepper, divided
1 (2-pound) boneless pork loin, trimmed
1/2 cup dry white wine
Chopped fresh parsley (optional)

Preparation
Remove roots and tough upper leaves from leeks. Cut each leek in half lengthwise. Cut each half crosswise into 1/2-inch-thick slices (you should have about 6 cups). Soak in cold water to loosen dirt.

Combine leeks, 1/2 cup water, 1 teaspoon butter, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a large Dutch oven or deep sauté pan over medium-high heat. Cook for 10 minutes or until leek wilts. Pour the leek mixture into a bowl.

Heat remaining 2 teaspoons butter in pan over medium-high heat. Add pork to pan. Cook 5 minutes, turning to brown on all sides. Add remaining 1/4 teaspoon salt, remaining 1/4 teaspoon pepper, and wine to pan; cook 15 seconds, scraping pan to loosen browned bits. Return leek mixture to pan. Cover, reduce heat, and simmer 2 hours or until pork is tender. Remove pork from pan. Increase heat to reduce leek sauce if too watery. Cut pork into 1/4-inch-thick slices. Serve with leek mixture. Garnish with parsley, if desired.

Sweet Pea and Tuna Salad

I was feeling like having something lighter for dinner after all the eating we did over the holidays which included two prime rib dinners, double servings of apple pie and who knows how many times I was dipping into the See's Candy box.

This is a quick and simple pasta salad. I used two different kinds of pasta that I had on hand, whole-wheat Penne Rigate (tubes) and Farfalle (small bow ties). I recommend sticking to a smaller sized pasta like they recommend in the recipe below or use Farfalle like I used as the larger pasta made it a bit heavier than it should be. I doubled the peas and celery and halved the amount of red onion and it turned out great.

Serves 4

Ingredients
4 cups short pasta, such as shells or orecchiette
1 1/2 cups frozen peas, thawed
1 stalk celery, chopped
1/2 red onion, chopped
1/2 cup roughly chopped fresh flat-leaf parsley
2 6-ounce cans tuna, drained
1/3 cup olive oil
1/4 cup red wine vinegar
1 teaspoon kosher salt
1/2 teaspoon Dijon mustard
1/4 teaspoon freshly ground black pepper

Directions

1.Cook the pasta according to the package directions. Drain and rinse under cold running water.
2.In a large bowl, combine the pasta, peas, celery, onion, parsley, and tuna.
3.In a small bowl, whisk together the oil, vinegar, salt, mustard, and pepper. Pour over the salad and gently toss. Serve at room temperature or chilled.

Fallon Family Resolution's

Samantha's Resolution: TO BE POTTY TRAINED COMPLETELY BEFORE THE NEW BABY ARRIVES

To help make this happen, I have bought my last box of diapers. We have about a quarter of the pack left and from then on out it is underwear and pull-ups.

She is doing really good and I think she is going to meet her goal. I am so proud of her for making this her New Year's Resolution :)




Todd's Resolution: FINISH THE REMODEL


Very soon one day you will see the blue tape, covered doors and all other construction materials gone from our house replaced by fresh paint, new counter tops and landscaping. This one may take the whole year but it will get done!

Todd has put a lot of blood, sweat and tears into this project and has done an amazing job so far.

Lollipop's Resolution: SPEND MORE QUALITY TIME WITH ZUKI (and lose a few LBS)


Hopefully via the increased play dates with Zuki, Lollipop will shed a few unwanted pounds.


My New Years Resolution: MAKE THIS HOUSE A HOME (AND CLEAN OUT THE GARAGE, AGAIN!)

There are no pictures up of our family, we need some essential furnishings and updated decor. We are so buried in trying to finish the larger projects around the home that we have neglected doing some simple things that will help to make our house feel more comfortable. On top of that, with our house about to welcome a new family member, the clutter has to go, especially in Samantha's room. We have accumulated way to many toys and many of them that are still in decent condition can be donated.

Wouldn't this picture look great hanging on our wall????


Oh and as far as the garage is concerned, that is really a Todd project but I am putting it on my resolution list as not to overwhelm him :)



So here's to hoping that Samantha continues to surprise us with her zest for using the potty, the economy in 2010 makes a huge improvement so that we can finish the house, Lollipop maintains regular workouts 4 to 5 times a week and I can get a few design lessons from one of the many talented girl friends that I have.

Oh and one more which I am not sure counts as a resolution, its more of a request for 2010, that we welcome a healthy, happy baby via a pain-free labor!

My "LOST" Encouter

Normally I would not go up to a celebrity I see and ask to take a photo. Santa Barbara is home to several and it is pretty common to bump into them once in a while. I imagine it is annoying to get asked for photos/autographs, but in this case, I didn't care. For some reason I felt like I was really meeting "Sawyer" who has been stranded on the island in the show "LOST" (ridiculous, I know) rather than the actor who plays him.

Todd and I are HUGE fans of the show and "Sawyer" happens to be one of my favorite characters. Samantha and I were doing some last minute Christmas shopping at Macy's and I got in line right behind him and when he turned around, I knew it was him. I felt so stupid saying, "Are you Sawyer from Lost?" and even stupider when I asked for a picture.

Holiday Recap 2009

Christmas 2009 was so much fun, especially with a 2 year old. Samantha did a great job helping to decorate the tree (most of our ornaments are from the Dollar Store which was a wise choice considering she rearranged the ornaments daily and broke most of them) and Todd did a great job of decorating the outside of our house with lights, poinsettias and Christmas bulbs. We even went to the Natural History Museum last weekend and played in the "snow". We got to see lots of family and opened lots of great gifts. We even got some unexpected gifts this year, a new laptop since Samantha dropped mine on our hardwood floors and broke it and new tires on our car since we got a flat tire on the way down to visit family, hopefully 2010 will bring us better luck when it comes to things like this ;)
